Why do some biscuits have holes?

Holes are created in biscuits to allow for heat to escape from biscuits during baking.

If holes were not to be created, then the heat would not be able to escape and temperature would not become stable in biscuits causing crack formation that can even cause the biscuits to break and such a faulty product would not be acceptable for either the market or the direct consumer.

It also helps to decrease the chances of oil filling inside the cracker.

For some food it will also help in better cooking in the middle. typically the cracker is thicker at middle and without a hole the middle might stay less cooked.

While eating the biscuits are crunchy due to the holes.
